TOR http://torproject.org - everyone knows it :)
I2P http://i2p2.de - this I like more since it's good for i2p based bittorents (there are few trackers and probably thousands of files so far)
FreeNet http://freenetproject.org - afaik it's totally uncensorable by anyone and most anon. but slow as fuck last time I tried.. will try again..

Or something else?
Btw http://me.ga will be probably less secure but will be mainstream :)
