Looks more convincing than the shrimp we currently have.

This makes me wonder about the possibility if it can be used as a defense structure as well. Then again, the acid tube design does exactly this.
This is a pretty good start. The one thing I would change is the base. The base is inconsistent with the base of our other buildings, where we have a more web-like creep at the base instead of a circular base.
Should it seem like a living structure (with eyes, mouth etc) to keep consistant with all the newer alien buildings?

That looks nice! As Ishq said, only the base should be changed. Instead of the circular pool, make it more web-like below.

I would actually probably say no. That only makes sense on the attack structures, which actually need to see things. Like, the acid tube, the trapper, and the hive. Remember, you can be a living thing, even an animal, and not have eyes or a visible mouth. Think of a starfish. Things that aren't needed by an organism tend to be dropped by evolution.
